Yummy Strawberry Salsa


Knowing my LOVE LOVE LOVE for salsa, my mom called me this morning with this SUPER YUMMY salsa recipe. I was so excited that immediatly the kids and I walked to macey's to get the ingredients. It is sooo yum.. I think anyway. I thought I would share it. I kind of changed it up a little bit.. because I tend to be a LOVER of cilantro and lime.. so I will give you the original version.. and my version in ()'s. My mom gave me the recipe for just a single batch.. and I wanted more than that.. so this is the recipe doubled. Doubled it probably made about 6 cups.

*2 Cup Chopped Strawberries (I just used the whole container of them (the regular size.. I guess.. Not a big one like costco.. Is it a pint?)
*1 Cup diced red pepper ( I just used one whole red pepper)
*2 Cup diced green peppers (I only bought 1 pepper.. and I think it was fine... but I'm sure more than that would be fabulous as well.)
*2 Cup diced roma tomatoes. (I used just 3 roma's.. but they were pretty big)
*1/2 Cup anaheim pepper (I just used the whole pepper)
*6 green onions.. with a good chunk of the green part
*4 tbsp cilantro.. (I used probably 1/2 of a bunch.. but I love cilantro!)
*2/3 Cup honey... (I only used probably 1/2 cup and I thought that was probably a just little bit too much.. next time I would probably not put quite that much.. but its still super yummy)
*1/2 Cup lemon juice
*2 Tbsp Lime juice (I think I probably put in like.. 1/4 cup.. but again.. I'm all about that)
*1 Tbsp dried pepper (I didn't use this)
*1 Tbsp Salt
*1/2 Tbsp Pepper

Even Hannah is addicted to this salsa already. I think its a PERFECT summer treat. We have been eating it with the Lime Tortilla chips.. and I think between Hannah and I we have almost eaten a whole bag to ourselves :)

I made it right after I talked to you and we love it. I asked Makenna to ask her dad if he liked it and she came back over and said "Dad said it's damn good" anyway it was yummy thanks for sharing.
